This restaurant opened as Amello in 06. A name derived from the initials of the owners kids for our beachside dream. Since then they have had the foreshore redeveloped in the front yard and many fantastic days and nights with weddings, birthdays and great parties.

The restaurant was a finalist for informal dining at the Restaurant and Catering Awards in 2008 and won the Prime Minister’s award for community partnership in 2007. But with the spanking new deck out the front between Amello and the sand, it was time to change the name to something that better suited the public nature of our huge venue on the beach.

Mojitos and prawns are an amazing combination for creative juices. It was during a classic St Kilda sunset, with prawns in hand with a piece of mint stuck in our teeth, that it dawned on them - there is no public bar-restaurant for fun on the sand in St Kilda, or Melbourne for that matter. One has to drive to Portsea or Frankston. Nice places, but the cab fare back is ridiculous. So that was the job, come up with a concept for a bar-restaurant on the beach - and Republica is it.
